Shawarma vs. Gyro: What’s the Difference?
Short answer: shawarma and gyro are cousins, not twins. Both are cooked the same way — meat stacked on a vertical spit, slow-roasted, and shaved off to order. What sets them apart is the seasoning, the sauce, and where the dish comes from. Shawarma is Levantine/Arab and warm-spiced; gyro is Greek and herb-forward.
The biggest myth is that the cooking method tells them apart. It doesn’t — the rotating spit is identical for both. The real differences are flavor and tradition.
Shawarma comes from the Levant and the broader Middle East. Its spice profile leans warm: cumin, coriander, cinnamon, cardamom, allspice, plus garlic and lemon. It’s usually paired with toum (garlic sauce) or tahini, with pickles and vegetables, in a wrap or over rice.
Gyro comes from Greece. It’s seasoned with Mediterranean herbs — oregano, thyme, garlic — with little to none of shawarma’s warm baking spices. The signature sauce is tzatziki, a cool yogurt-cucumber-garlic blend. In Greece it’s often pork or chicken; the ground beef-and-lamb version many Americans picture is largely a U.S. product.
