Shawarma vs. Kebab: What’s the Difference?

Short answer: shawarma is one specific dish; “kebab” is a whole family of dishes. Shawarma is meat roasted on a vertical spit and shaved off in thin layers. “Kebab,” in everyday use, usually means meat cooked on a skewer over direct flame. In fact, shawarma is technically a type of kebab — so they’re not opposites, they’re parent and child.

Here’s the framing most comparisons miss: “kebab” isn’t a single recipe. It’s a broad umbrella covering grilled-meat dishes from the Middle East, Mediterranean, and South and Central Asia — shish kebab (cubed meat on a skewer), kofta or seekh kebab (spiced ground meat molded onto a skewer), and more.

The clearest practical contrast is the heat source and the meat form. Shawarma is cooked on a vertical rotisserie: whole-muscle meat stacked into a cone, slow-roasted as it turns, then shaved into thin layers. The flavor comes from a warm-spice marinade and the meat basting itself as it roasts. Kebab, in the skewer sense, is cooked over direct charcoal or flame — so it’s smokier and more charred, with either chunky cubes (shish) or tender seasoned-throughout ground meat (kofta).
