A great shawarma isn’t built on a single famous cut of meat — it’s built on technique and consistency. The marinade matters more than the breed. The slow-roasting matters more than the grade. The toum and tahini and salad on the plate matter more than what’s printed on the menu. When all of those are right, you taste a dish people in the Middle East have been perfecting for centuries.
Our beef shawarma is the result of three things we won’t compromise on:
- Halal-sourced beef. Sourced specifically for shawarma — cuts that hold their texture through long marination and slow roasting.
- Overnight marinade. Twelve hours minimum in a family-recipe spice blend — garlic, lemon, olive oil, cumin, paprika, sumac, and a few things we won’t share. Time is the ingredient most restaurants skip.
- Traditional vertical spit, slow-roasted for hours. Stacked in cone form, rotating against the flame, hand-shaved as the outer layer caramelizes. This is the method, full stop.
Family recipe out of Iraq
Shawarma House is a family kitchen. The beef shawarma recipe traces back two generations to Iraq, and it’s the recipe we’ve been making the same way since we opened on Newport Avenue. The sauces — toum (garlic), tahini, hot sauce — are made fresh in the kitchen every morning, from scratch. The salad is chopped in the morning. The hummus is made in batches, not bought from a tub.

How to order the experience
For the cleanest taste of the meat, get the beef shawarma plate: slow-roasted beef over seasoned yellow rice, with a fresh chopped salad, hummus, warm pita, and our house-made garlic sauce on the side. Add an order of beef kebab if you want a second protein on the table — the kebab is char-grilled to order on the skewer, which is a completely different cooking method than shawarma, and tasting both at the same meal is the most complete way to understand what our kitchen does.
For a special-occasion dinner, the family combo scales the same plate up for groups. For catering — corporate dinners, weddings, birthdays — we have a separate ezCater menu built around the same proteins.

A: We source halal beef from suppliers who consistently provide cuts that hold up to overnight marination and hours on the slow-roasting spit. We don’t disclose specific suppliers, but we’re happy to confirm halal sourcing in person at the counter. The marinade and the slow-roast technique do most of the work — the cut is selected for the cooking method, not the other way around.
